Produced using traditional tequila-making techniques, the agave is slow-cooked in brick ovens, naturally fermented in open-air tanks, and double distilled in a combination of copper and stainless steel alambique stills to preserve its authentic agave character.

Unlike many reposados, Cutwater Rayador is matured in used Cutwater whiskey barrels shipped from the company's San Diego distillery to Jalisco. This unique aging process imparts layers of vanilla and oak while allowing the roasted agave flavors to remain at the forefront. The bottle's distinctive label features the hand-drawn skull of the Rayador (Black Skimmer) seabird, paying tribute to both Mexican folk art and the Cutwater brand identity.

The tequila opens with aromas of roasted agave, vanilla, and oak before revealing a smooth palate of caramel, cooked agave, light spice, and toasted wood.
