Fidencio Pechuga Mezcal is an artisanal Oaxacan mezcal crafted as a special annual expression celebrating the harvest. Produced by fourth-generation Maestro Enrique Jiménez in Santiago Matatlán, Oaxaca, this distinctive mezcal begins with estate-grown Espadín agave (Agave angustifolia) and undergoes an elaborate third distillation with fresh seasonal fruits and traditional pechuga de pollo.
The Espadín agave is cooked in an earthen pit oven with volcanic rock and black oak, then crushed using a traditional tahona. Fermentation occurs naturally with wild yeasts in pine vats before the spirit is distilled in 500-liter copper alembic stills.
What makes Fidencio Pechuga particularly distinctive is its third distillation. Fidencio Clásico is redistilled with a seasonal combination of indigenous quince, pineapple, apples, bananas, and guava. During this process, a chicken breast—or pechuga de pollo—is suspended inside the still. This traditional technique contributes additional complexity and texture to the finished mezcal.
The aroma reveals expressive notes of banana, quince, and roasted agave. On the palate, layers of grilled pineapple, spicy fruit, and roasted game create a complex balance between fruit, savory character, agave, and smoke. The texture is rich and expressive, leading into a long, smooth finish.
Fidencio Pechuga is bottled at batch proof, typically 47–49% ABV, meaning the exact alcohol percentage may vary by batch.
