The mature sotol plants are slowly roasted in a traditional wood- and rock-fired earthen pit oven, hand-milled with axes, naturally fermented with wild yeast in pine vats, and double distilled in copper alembic stills. These time-honored techniques produce a spirit with remarkable purity, minerality, and complexity.
The nose opens with aromas of dried grass, minerality, and delicate smoke. The palate delivers flavors of sunflower seeds, caramel, fresh herbs, peppermint spice, and earthy notes, supported by a medium-to-full body and a velvety finish.
