Unlike conventional tequila or mezcal, Tutsi is made from wild Maguey Masparillo (Agave maximiliana) that is harvested by hand, roasted in an earthen pit with oak and volcanic stone, hand-chopped with wooden mallets, naturally fermented with wild yeast, and single distilled in a traditional Wixarika tree-trunk still. Production is exceptionally limited, with only a handful of small batches produced annually.
