Lágrimas del Valle Plata La Sabina 2024 is a terroir-driven tequila showcasing Blue Weber agave from a single rancho and harvest. The agave for this release comes from La Sabina in Romita, Guanajuato, a high-elevation property situated approximately 1,760 meters above sea level, with mature agave averaging an impressive 37° Brix at harvest. Produced at Cascahuín (NOM 1123) under Maestro Tequilero Salvador “Chava” Rosales Trejo, the agave is cooked in masonry steam ovens before being crushed using a combination of 70% steel roller mill and 30% traditional stone tahona. The roller-milled portion ferments in stainless steel, while the tahona-crushed agave undergoes natural fermentation with ambient yeast in open-air wooden tanks. Skurnik Wines & Spirits
The tequila is then double distilled, first in a 2,000-liter stainless steel pot still with a copper coil and again in a 350-liter copper pot still.
