Part of Old Elk’s Master’s Blend Series, Double Wheat brings together the distillery’s Straight Wheat Whiskey and Wheated Bourbon. The resulting blend emphasizes wheat far beyond what is typically found in American bourbon, producing an equivalent mash bill of 71.5% wheat, 25% corn, and 3.5% malted barley.
The whiskey is composed of mature stocks aged between six and eight years, giving the grain time to develop layers of sweetness, oak, fruit, and spice. Old Elk’s wheat whiskey itself is built around soft red winter wheat, a grain the distillery values for its naturally smooth and sweet character.
Bottled at a robust 53.55% ABV (107.1 proof), Double Wheat retains substantial concentration and body. Despite the higher proof, wheat helps create a creamy, rounded profile characterized by vanilla, crème brûlée, butterscotch, brown sugar, candied nuts, seasoned oak, and a touch of ginger-like spice.
Old Elk also employs its proprietary Slow Cut® proofing process, gradually adding water over an extended period rather than proofing the whiskey rapidly. The distillery says this approach is intended to preserve lighter and more delicate flavors that can otherwise be lost during proofing.
Double Wheat is best enjoyed neat to appreciate its full texture and wheat-driven sweetness. At 107.1 proof, adding a few drops of water can reveal additional aromatic layers, while serving it over a large ice cube gradually softens its strength.
