Pearse Distiller’s Choice 7 Year Old Irish Whiskey is an award-winning blended Irish whiskey from Pearse Lyons Distillery in Dublin, Ireland. Combining grain and malt whiskeys aged for a minimum of seven years, this elegant expression delivers layers of citrus, dried fruit, caramelized pear, cocoa, warming spice, and gentle oak.

The blend is predominantly matured in ex-Bourbon barrels, complemented by a smaller amount of whiskey matured in Sherry casks. The Kentucky bourbon barrels are sourced from Pearse Lyons Distillery's sister distillery in Lexington, Kentucky, helping develop the whiskey's characteristic combination of vanilla-rich oak and fruit.

Importantly, the blend also incorporates single malt produced by Pearse Lyons, giving Distiller's Choice a connection to the distillery's own Dublin whiskey production while retaining the balance and accessibility of a carefully composed Irish blend.

The nose opens with fresh citrus and dried fruit, creating a bright introduction to the whiskey. On the palate, light oak is joined by green grape, caramelized pear, cocoa, and dried fruit, producing a smooth balance between fresh fruit, sweetness, and barrel character.

The finish develops into warming notes of stewed apple, clove, and custard, leaving a gently spiced and fruit-driven conclusion.

Pearse Distiller's Choice has earned significant international recognition. It was named a Category Winner at the World Whiskies Awards in both 2020 and 2021 for Blended Irish Whiskeys 12 Years and Under.
