The mature agaves are harvested after 7 to 10 years, slowly cooked in traditional brick ovens, and crushed using the same basalt tahona wheel the distillery has used since 1886. The extracted juice is naturally fermented in pine wood vats before being double distilled in copper pot stills, creating an exceptionally expressive tequila with remarkable depth and purity.

Bottled at 40% ABV (80 Proof), San Matías Tahona Blanco offers vibrant aromas of citrus, white flowers, and cooked agave with delicate hints of pink pepper. The palate is naturally sweet with pronounced mineral character, balanced acidity, and virtually no bitterness, finishing clean and smooth.
