Sotol Coyote Víbora Edición Especial is a distinctive small-production Mexican sotol from Aldama, Chihuahua, crafted from wild Dasylirion leiophyllum and produced using traditional desert distilling methods. This remarkable expression takes its name from víbora—Spanish for snake—and incorporates rattlesnakes during its second distillation to create an unusually savory and complex character.
Unlike tequila or mezcal, sotol is produced from Dasylirion, commonly known as Desert Spoon, rather than agave. Sotol Coyote uses mature wild plants that average approximately 34–35 years of age, with roughly one hand-harvested plant required to produce each bottle.
Production is overseen by Maestro Sotolero Gerardo Ruelas Hernandez. The harvested Desert Spoon is cooked underground with pecan firewood before being manually ground with an axe. Fermentation takes place in pinewood tubs with well water, preserving the traditional character of the raw material.
Víbora's defining feature comes during its second distillation, when rattlesnakes are suspended in the bell of the handmade copper alembic still. This unusual traditional technique contributes a distinctive savory quality while complementing the earthy and mineral character of the sotol.
Following distillation, Víbora undergoes a short maturation process involving whiskey-seasoned oak, including approximately two months in red oak, which mellows the spirit while retaining its unmistakable desert character.
The resulting spirit offers earthy green pepper flavors, pronounced minerality, and an elegant full body. A subtle sensation of spice appears on the tip of the tongue before developing into a savory, silky, and lingering finish.
Bottled at 45% ABV (90 proof), Sotol Coyote Víbora Edición Especial is an adventurous sipping spirit with remarkable depth and a production story unlike almost anything else behind the bar.
