San Matías Tahona Añejo Tequila is an artisanal, small-batch tequila that celebrates traditional production methods and more than a century of tequila-making heritage from Casa San Matías.

Made from 100% Blue Weber agave grown in the mineral-rich red soils of the Highlands of Jalisco, the agave is steam-cooked in masonry ovens before being crushed with Casa San Matías' traditional tahona stone dating to 1886. The juice is fermented in wooden vats and distilled in copper stills, preserving the earthy, vegetal character associated with traditional tahona production. 

The Añejo expression is matured for 12 months, developing a rich golden appearance and a layered aromatic profile of lemon leaf, green pear, pineapple and vanilla, followed by dried herbs, bread crust, honey, pink pepper, orange peel and sweet cinnamon. 

On the palate, it is gently sweet and mineral-driven with balanced acidity and no pronounced bitterness. Bottled at 40% ABV (80 proof) in a 750ml presentation, San Matías Tahona Añejo is particularly well suited to slow sipping neat or over a large cube.

Tasting Profile

Appearance: Ripe wheat-gold with bright golden highlights and a subtle greenish hue.
